Namak para, also nimki or nimkin is a crunchy savory snack eaten in South east Asia.
Namak para is ribbon-like strips of pastry delicately seasoned with ajwain and cumin seeds. Traditionally, this is made with All purpose flour (Maida) and deep fried. which is unhealthy and specialy for diabetics.
In our version, we have replaced the all purpose flour with Almond Flour and instead of deep frying in oil we are baking it making it a low carb and healthy dish.

Ingredients
Almond Flour - 1 and 3/4 cup
Psyllium Husk - 1 tbsp
Cumin Seeds - 2 tsp
Carom Seeds - 2 tsp
Turmeric - 1/2 tsp
Chilli Powder - 1 tsp
Coconut Oil - 1 tbsp
Water - for making dough
Salt to taste
Method of preparation
Preheat the oven to 350 F / 175 C.
Mix all the ingredients together and add water to make a cohesive dough
Place the dough onto a sheet of parchment. Pat it out with your hands, and top with an additional piece of parchment or plastic wrap. Roll the dough out to about 1/8" thickness; it should be about 10" x 12", or larger.
Remove the top paper, and cut 1" squares.
Move the pieces, along with the parchment paper, to the baking sheet.
Bake the pieces for 16-18 minutes, until they're light golden brown.
Cool completely before transferring them to an airtight bottle and store it at room-temperature for upto 10 days.
