Ragi-The miracle grains



"Ragi". Here is, perhaps the best substitute for white rice and is good to take alternating with Quinoa.
Ragi is a cereal grain or finger millet originally from Ethiopia but also grown in India and Africa. It is a small-seeded grain, which is considered to be drought and pest resistant, and its scientific name is Elusine corcana.
Eating ragi may in fact be healthier than white rice for some people, especially with diabetes, and here is why. Eating whole grains can be beneficial for prevention and management of type 2 diabetes. Among people eating millet, a lower incidence of diabetes has been reported. Ragi contains much higher amounts of dietary fiber and minerals and more protein than rice.

What do you do with Ragi powder that is available in most Indian stores? 

a) Morning Ragi drink, Ragi Malt:
Boil water, add ragi, add some himalayan pink salt, add some crushed cardamom, add some milk (optional) and mix it and when it boils once a little at the edges, that is enough.  mix and eat it. Make it dilute if you wish to just drink it.  note: a baby can digest it.
  -- customize it and do not use sugar, stevia perhaps might be good instead of sugar

b) Ragi tortillas:
I mix it with water, add some pink himalayan salt, add some cumin seeds, mix with your hands and pour water accordingly to create a medium thick batter. Pour into a heated oily pan and make the tortillas. Eat with some coconut chutney (frozen ones in small cups I buy at Indian store and microwave for 45secs). 
I just came back from workout and ate 4 of these tortillas and it was just awesome.
